One 130pt last-man-standing game we played came down to just Vader vs. Luke. They both had full shields and no missles/torpedoes left. It was pretty evenly matched.
There were a number of times where Vader could barrel roll out of the way so he could shoot Luke without being shot at himself. His skill was Squad Leader which did him no good at this point.

Luke had an advantage with R2-D2 in this particular setup and that helped him to win, plus a few very lucky rolls.

I'm not sure how it would turn out if the game started off as a 1 on 1, but I think it's worth a few test plays. The only downside I can think of is that it can quickly become just a game of dice if the players keep choosing the same manuevers over and over again. At that point you might as well just stop moving ships and roll dice back and forth to see who wins.
